It’s no secret that Hamburgers love good bread, preferably crusty on the outside and soft and fluffy on the inside. Bread here you go. Because this is exactly the kind of sourdough bread that Swiss-born Christian Aeby bakes in his small, 4-square-metre bakery in Eppendorfer Weg. But how did this perfection of bread come about in the first place? Quite simply homesickness. Christian simply missed the delicious Swiss Bürli from his home in Basel so much that he spent so long tweaking a recipe until he was able to bake the perfect sourdough bread that tastes just like the legendary Bürli. His dough consists of five ingredients, matures for 36 hours and is then sold in the form of long thin sticks, as baguettes and as loaves. The delicious bread is also available at the weekly markets in Isestraße, Turmweg and Osdorfer Landstraße.
