The Filet of Soul exudes modern flair, just the same way, as the international art hanging right next door in the Deichtorhallen does. Behind large glass windows, business people from the quarter, gourmets from around, art lovers and tourists, sit at modern wooden tables, beneath UFO sized lamps, enjoying the restaurant’s relaxed atmosphere and the view of the kitchen. They don’t cook in formal chef jackets and the guests are welcomed casually. The concept stems from proprietors and chefs Florian Pabst and Patrick Gebhard. Withit they won, in spring 2005, an award for their restaurant. At lunch they offer seven, changing, freshly made dishes costing no more than €12,-. And their home made cake, which goes perfectly with an espresso, is already waiting for you on the counter. However, in the evening, the Filet of Soul reaches the height of its grandeur, when you read from the blackboard what seasonal market cuisine the chefs have created today.
