In Bali, you don’t just spend a couple of hours in a comfortable Souterrain. Once you step inside, you’ll find yourself immersed in another atmosphere – utterly stress-free and chilled out, the air permeated with the scent of well-being. The aroma of Basmati rice will awaken your taste buds, drawning an appetite for Indonesian cuisine, all of which is prepared with the authentic taste of Bali. There is chicken, beef, vegetables and fish in all kinds of varieties, including fried fish in sweet and sour sauce, satay-sticks in peanut sauce, or tofu lathered in ginger. The most popular item on the menu is the fried Aubergine in an aromatic dark chilli sauce. To our minds, a ginger and lime tea suits the sweet and spicy edge of this dish rather well. The jade-green walls are sparsely decorated with cosy candlelight and the odd mask, statue and deity. Apart from that, the interior is wholly folklore free. Vaurouni Siauw had already helped her grandmother as a child, and she shut down her art studio in Barcelona in order to take over the restaurant from her when she died. Her serenity can be found throughout the atmosphere of the restaurant. It is the kind of place you’ll return to again and again.
