Early in the morning in Via Bettino Ricasoli there is a smell of the famous Biscotti di Mattonella of the Biscottificio. The secret of their taste goes back to the 19th century, to Antionio Mattei. His art of baking went down in the history of Italian cuisine and is still being continued today, in the third generation. While the blue bags of Biscotti di Prato are a must for many espressos throughout the country, the original Biscottificio is still in Prato.
