Poissonnerie Laurent is one of the most popular fish restaurants in Cassis. It is always busy, the waiters hurry from the kitchen, and the owner Eric Giannettini coordinates the occupancy of the tables with Sicilian temperament, entertains waiting guests and sometimes brings out a chair if it should take a little longer. The audience is a colourful mix of locals, city dwellers and tourists who come to eat bouillabaisse. “The real bouillabaisse is cooked here,” Eric explains, following his grandmother’s original recipe. She was strict about keeping the soup simple without scallops and other noble fish. His father hated this soup and called it “the soup of the unsold fish”. Today you can get both versions at Eric’s, either as fish soup on its own or with grilled pieces of fish, each served with crispy croutons and rouille, a garlic mayon naise. With a cool white wine and a view of the fishing harbour with its sailing boats and the harbour promenade, an evening in Cassis could not end on a better note.
