Inspired by his homeland Byron Bay in Australia, which has some similarities to Bali in terms of health conscious lifestyle, hipster paradise and oasis of relaxation, Pablo Fourcard fulfilled a dream and created with the Watercress the epitome of a healthy lunch spot with a relaxed atmosphere à la Byron Bay. Whether the fresh salads, the numerous gluten-free snacks or brownies everything is delicious here. An all-time favourite of the regular guests is the Australian Angus Beef Burger with fennel, cranberries, tomatoes and cheddar. After Watercress was so successful in Seminzak, Fourcard decided to open an offshoot for the Ubud community.
