Behind Apollo Bar is probably Copenhagen’s most exciting chef: Frederik Bille Brahe. He has slipped perhaps his finest coup into the iconic Charlottenborg Art Hall, cleverly hidden from the crowds of visitors to the colourful rows of houses in Hyhavn Central Harbour. In the courtyard of the imposing city palace, made of brown brick overgrown with ivy, there are marble tables on which pastel-coloured menu sheets lie; inside, the high ceilings soak up the smell of coffee. There is a small but fine menu to choose from, with great wines, fantastic courgette flowers and blueberry ricotta toasts. But Apollo Bar is not just about the heavenly food, it’s also about meeting the most stylish Danes in town. An absolute place to be.
