The cheese cathedral. Typical for the Bregenz Forest is the modern architecture, which incorporates many traditional elements. The result is beautiful, light-filled houses. This architecture is also often used for larger, commercial buildings, such as the Bregenzwald cheese cellar. The building is very large, very high and when you enter, the first thing you see is a large shop where you can buy lavish cheese, but also chutneys, jams, pastes, bread and many other beautiful things. But, on the front wall you can see them, – a lot of cheese loaves – to be exact, up to 32 000. They are here to mature, because the Bregenzwälder Käsekeller is a community affair of the Cheese Road Bregenzerwald – a cooperative of local dairies. In this respect, you can try and buy really wonderful, authentic cheeses here – even from alpine farmers. Those who like can get a guided tour on request and learn a lot about the art of cheese-making. Here you can get a wonderful cheese plate and also a simple but excellent cheese sandwich. The oldest mountain cheese, by the way, is 24 months old – but if you have to ask, it is not always there, but it is wonderfully spicy. The whole thing has a wonderful cheese smell!
