The Cavalli Estate is a total ecological work of art, created by Lauren Smith, who is both architect and owner. Her aim is to run the Cavalli Estate without leaving CO2 footprints. To achieve this, she uses solar energy, recycles waste water and much more. She and her restaurant, Equus, were the first restaurant in the area to be awarded a green ecological star for their commitment. The fact that eco doesn’t necessarily mean dungarees and wholemeal noodles is demonstrated by both the established public and the great cuisine that comes with dishes such as smoked pastrami and perfectly cooked meat. And you should order the ultimate wine, a cremello. As the name suggests, it is velvety soft. Besides the restaurant and the winery, the property also includes an art gallery that is definitely worth a visit.
