Hidden away in the heart of the 11th arrondissement is a real gem. At Déviant, everything revolves around the bar in the centre of the room – a marble counter surrounded by bar stools, mirrors and a great atmosphere. This is a place for sharing, drinking and laughing – with great wine, exciting dishes and, above all, passion. The team’s hospitality characterises the place at least as much as the food: the windows and doors are always open, people come and go, many of them know each other. It’s a bit like the neighbourhood living room – waiters from surrounding bistros, friends of the team, regulars – everyone stops by for a quick nightcap. The music is loud, but never too loud – the playlist is spot on. The team dances behind the bar, and eventually the guests join in – and that’s what makes Déviant so special. At the centre of it all are manager Josquin and his right-hand man, sommelier Allan – charismatic, attentive, present. With a flair for wine and people, they light up the whole room. The wine list is long and varied – open wines from France, Italy, Hungary, Greece and beyond. The sommeliers know exactly what they’re talking about and can read your wishes from your lips. There is also a small but well-thought-out menu with freshly caught fish dishes and unusual combinations such as tuna with satay and stracciatella, trout with Buddha’s hand and pistachio cream, or morels with scallops from Normandy and sea urchins from Brittany. Yes, the prices are steep, but the experience makes it worth it.
