While the family runs the inn and farm, he designs creative menus. Linen seed chips and fermented vegetables show how exciting modern, regional cuisine can be. The interior vacillates between minimalism and farmer’s cupboards – the Strelitz Forsthaus is gradually evolving from a caterpillar to a butterfly.
