Native Borholmers, these two islanders have made it their duty to reinvigorate the food culture of Denmark’s Baltic islands. Freshly caught fish and shellfish feature in starring roles. Inspired by Asian or French cuisine, the dishes are made primarily with island products. Begin your meal with St. Clemen’s cheese, a Bornholm specialty, and delicate, flaky Roggenbrot followed by an aromatic lobster broth with green strawberries and cucumber. Highly recommended!
