La Matriciana is a traditional restaurant through and through. According to the story, in 1870 a lady from Amatrice set out for Rome to cook the region’s famous “bucatini all’amatriciana” on the spot where the restaurant now stands. Today, La Matriciana is run by the Crisciotti family, and brothers Fabio and Mauro hold on to the dishes that have been served in the restaurant since the 1930s. As well as the world-class bucatini all’amatriciana, you should try something you’d normally only see in Rome: Puntarelle – inner stalks of Catalan chicory sliced paper-thin and seasoned with anchovies and lemon juice.
