Bistro Le Canon attaches great importance to the quality of its ingredients, most of which come from local producers. There is no fixed menu, but a blackboard with daily changing dishes. Always according to what the suppliers have on offer. These are usually good acquaintances of chef Elmahdi Mobarik. Steve the fisherman, for example, or the local vegetable farmers. Everything should be as fresh as possible. Prepared in front of the guests in an open kitchen. The presentation of the dishes is simple, but generous and filling. The legendary veal head and the black pigs from Grasse are among the highlights. But the gazpacho made from tomatoes, white peaches and sheep’s milk is also delicious. The wine list is equally impressive. Only natural wines, from winegrowers whose working methods and products restaurant manager Sébastien knows inside out. The ambience is casual, almost a little studentishly imperfect – personalised with passion, which has become rare in Nice.
