Claus Meyer, restauranteur behind Noma, has opened his second locale, Restaurant Radio, a bistro-style version of Noma in the Frederiksberg district of the city. The cuisine adheres to Meyer’s 10-point manifesto of New Nordic Cuisine, which only uses ingredients that reflect Scandinavia’s climate, waterways, and landscapes. Regional varieties of vegetables, herbs, and berries come from an abundant 2-hectare farm located just outside Copenhagen. Ambitious chefs du cuisine Rasmus Kliim and Jesper Kirketerp take their guests on a wonderfully unique culinary journey.
