The rustic restaurant Es Verger is best known on Mallorca for its delicious shoulder of lamb. The secret recipe behind it? Lots and lots of time, because the lamb dish is cooked to perfection in a bath of herbs in the wood-fired oven for over three hours. Es Verger also offers other delicacies of typical Mallorcan cuisine, such as rosemary kid and suckling pig. And there is good but simple local wine to go with it. But let’s not kid ourselves, Es Verger is definitely no longer an insider tip and is very popular with travellers and locals alike. Despite the somewhat winding and narrow streets up here and the very authentically simple but charming atmosphere with plastic chairs and a service that is not always on point, everyone loves Es Verger. The food here is definitely impressive and well worth a visit.
