Santo Palato is exactly what a Roman trattoria should be: unassuming from the outside, but bright and inviting once you’re inside. More accurately, Santo Palato could also pass for a retro trattoria, with its tangerine-colored walls and tiled floors. But it’s not just the interior that’s a highlight, it’s also the carbonara recipe from young and extremely talented chef Sarah Cicolini that almost the whole town raves about. Besides the carbonara, the daily changing menu has much more to offer: Beef tenderloin with lime and radicchio, rigatoni with pork cheek and pecorino, or chicken stuffed with truffles. It’s best to stop in here at lunchtime. The staff is young, in a good mood, and if you’re torn between two dishes, as most are here, they usually have the right recommendation.
