Behind the Soloccicia is Dario Cecchini – probably the most famous butcher in Tuscany, who has been running the butcher’s shop in family tradition for eight generations. He is a true great in the foodie world – culinary world stars from Jamie Oliver to Anthony Bourdain pilgrimage to him at the bar, as do Prince Charles, Sting and Elton John. They are all fascinated not only by his craftsmanship, but especially by his dedication. Opposite the butcher is Solociccia, one of Dario’s restaurants. It serves menus with several courses – of course with a focus on meat, or more precisely on short roasts or long stews. A simple Italian cuisine, but very differently seasoned and refined. A must try are the Tatar balls.
