Chef Raphaël Grima and pastry chef Marion Luque-Bouvier, with their culinary skills in tow, set up shop in the charming village of Tourettes-sur-Loup in the hinterland of Nice, and Spelt was born. In an old building that has been completely renovated (exposed stone walls and an impressive terrace with dizzying views of the steep valley below), the duo serves an expertly prepared seven-course menu: Tender caramelized onions nestled in mashed potatoes and swimming in a licorice-flavored broth; delicate porcini fricassee, serrano ham and Parmesan tartelette; or spelt wheat risotto with lobster bisque and Parmesan mascarpone cream, topped with a generous slice of lobster meat. Just plain great! And to rave on, for the sweet mouths, there’s a white chocolate trompe l’oeil style lemon filled with a mint ginger cream, drizzled with calamansi juice and preserved peel, served with a lime tequila sorbet. Wow. Spelt is a must go for all foodies.
