At State Bird Provision the waiter comes to your table with a cart or tablet and brings you up to 30 different hors d’œuvres per evening, which vary from steak tartar with marinated onions and small Japanese peppers, burata on toasted bread, calf with figs, avocado with seafood salsa to Yuba: Japanese milk skin with almond-parsley pesto. Married couple Stuart Brioza and Nicole Krasinki retreated in catering for 3 years, just to make this magnificent culinary comeback in 2012. They hardly even opened their doors and magazine Bon Appétit was already asking itself if “the State Bird could be the best new restaurant of the USA”. In any case it’s one of the most unusual and it’s an adventure to eat your way through those superb small bites.
