Nestled in the Ferch mountains, in the immediate vicinity of the Schwielowsee lake, lies a quaint little restaurant with a winding garden, in which many cosy sitting niches hide: The wild boar bakery. The name says it all, because here the wild boar meat is baked in large, ancient stone ovens. Volker Paulus, hunter and operator of the restaurant, gets a fresh boar weighing up to 35 kg into his oven in one piece. The wild boar is cooked for at least four hours at extremely high heat in the oven until it is unusually juicy and tender and ready for consumption. In addition to wild boar, other game species such as deer, stag, hare, pheasant and wild duck are among the specialities of the house. Before it goes into the oven, the meat is marinated in a stain of red wine, cooked root vegetables, juniper berries, spruce twigs and other herbs. There are also homemade dumplings, red cabbage, mushrooms and potatoes.
