Beba – the brunch and lunch space was named and inspired after the grandmother of the managing director Shani Leiderman. As a museum restaurant, the Beba enriches the Martin-Gropius-Bau with the whole range of Jewish diaspora cuisine. That means egg salad with salmon bagel, Green Middle East salad with fish, the Israeli streetfood classic Sabich, Challah French Toast and Israeli Schnitzel. It was clear from the very beginning that Shani and her business partner Anat do not want to reinvent recipes, but rather prepare tried and tested dishes in such a way that they fit into the here and now. They also wanted to make everything themselves. The challah, all pastes, dressings and sauces, the pickled vegetables and the syrups for drinks are homemade.
