A special feature of Carbon is that the cooks cook almost exclusively on a Spanish Parilla grill lined with oak wood. Oysters, steaks, chicken, lamb, fish and vegetables garnish them with herbs and a finely seasoned red wine sauce. Waiters serve smoked starters such as bonito with smoky tomato water or barley risotto with charred cabbage. In short, this is a place where every foodie should spend an evening.
