The idea of these rolls can pose a challange to even the most adventurous appetites – tripe is not to everyone’s liking. The texture of the tender meat is somewhat similar to that of calamari, and the taste actually is very mild. In Tuscany tripe is a common dish, often served with a spicy tomato/potato sauce, and served inside a simple panino, or sometimes simply sliced as a cold salad. The best spot to sample the delicacy is at the street cart in front of Cibrèo Trattoria. Once tried, the Lampredotto panini will not be forgotten. Go ahead, don’t be afraid!
