Always uphill in Arraiolos, just follow the signs to the impressive 14th-century castle and you’ll come to this very rustic, typical Portuguese restaurant. Schuppen is called Alpendre in German, and that’s how the family-run business is laid out. Stone floors, lots of wood, old harvesting tools, milk churns and ladles on the walls and the tables are set in white. You shouldn’t come to José Manuel Severino too late in the off-season, when it’s not so busy. But even then, the daughter of the house serves what is really better here than in other places: Migas de Espargos, green asparagus in steamed bread. Actually a side dish to meat. But you can also order it separately. Then comes the large, not particularly handsome, but all the more delicious flatbread with grilled mushrooms and parsley in olive oil. The mixture of green asparagus, stirred into the batter as a mush and also as pieces in it, has just the right proportion. You spoon off a piece, drizzle it with fresh lemon – and enjoy. Of course, there are other Portuguese classics on the menu and also migas, which is a traditional Portuguese peasant recipe, with tomatoes, green beans or even bacalhau, stockfish, but the one with espargos is simply the best. Add a glass of the white house wine and that’s all you need!
