In Valeggio sul Mincio you’ll probably get the best tortellini in the world. The women in Valeggio prepare the tortellini very thinly, and obviously know better than anyone how to fill them with ricotta, meat and aromatic herbs and vegetables. The finest of their kind can be found in the country inn “Alla Borsa”. The pasta dough is made here, as is customary in old manufactories, by a pasta machine in the spacious kitchen until thin and long ribbons are formed. The women, dressed in white gowns and hoods, then process the dough by hand and fill it with various mixes until it is folded into the unmistakable tortellini. All ingredients come from the region, fresh and are processed directly in the house. Outside, the atmosphere is reminiscent of a garden restaurant and you can enjoy the view of the historic Castello Scaligero.
