Windisch – the art of baking

Windisch on Lappenbergsallee is one of those bakeries where you very quickly realise that the person behind the counter is absolutely passionate about baking. Behind the counter lie sourdough loaves, croissants, swirls and cakes – all artisanally made and in such a wide selection that it’s hard to choose. Our absolute favourite is the sourdough cardamom ring – lightly caramelised on the outside, moist on the inside, wonderfully buttery and packed with cardamom. They really are the best we’ve ever tasted. And you absolutely must try the Catalan cheesecake: darkly baked, almost creamy on the inside and with precisely that slightly tart, caramelised top that makes it so good. Windisch isn’t the sort of place where you just pop in to grab a quick loaf. You stand in front of the display and are guaranteed to end up taking home more than you planned. The sourdough loaves are also well worth trying, with a crisp crust and a moist crumb. A small bakery with exceptionally high standards – for us, one of the best bakeries in Hamburg, particularly because of these cardamom bullars.
